Wholesome Oatmeal Pancakes

These pancakes are hearty, delicious and packed with nutrition. They will add sweetness to your morning and give you the fuel needed to start your day!

Everyone has a breakfast favorite. I would say I constantly switch my 3 favorite morning meals quite frequently. However, these pancakes have consistently remained at the top of my breakfast "go-to"s. Whenever I visit home, my mom always makes specific foods that I love. These pancakes are always at the top of my request list of "Mom specialties". This recipe has been tweaked by her over the past 20 years.


These pancakes keep you full and incorporate Greek yogurt and eggs so you get to eat your pancakes and your protein at the same time. The toppings are optional but have been my favorite additions to this breakfast meal!


Oatmeal Pancake Recipe

Ingredients

  • 2 cups oat

  • 1/2 cup all purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • pinch of salt

  • 1 cup Greek yogurt

  • 1 1/4 cup buttermilk (can substitute for almond milk)

  • 2 eggs

  • 1 tsp vanilla

  • 1/2 tsp almond extract

Toppings

  • banana slices

  • walnuts

  • toasted coconut

Steps

  1. Place the oats in a food processor and pulse until partially broken down. (this allows the oats to incorporate fully with the other ingredients)

  2. Move the oats into a large mixing bowl and add the flour, baking soda, baking powder and salt. Mix until combined.

  3. Add the wet ingredients to the dry mixture and stir until fully incorporated. You may have to add more buttermilk (or almond milk if you are using it as a replacement) in order to thin down the batter to obtain the proper consistency.

  4. Let the batter sit for 10 minutes (or overnight in a refrigerator) in order to allow the oats to soften.

  5. Heat a non stick pan on medium-high heat and add butter to the pan. Scoop roughly 1/4 cup of batter onto the heated pan. Spread the batter out so that the pancake is no thicker than 1/4 inch. Flip when small bubbles start to appear in the center of the pancake. Cook until lightly brown.

  6. Serve with banana slices, walnuts and toasted coconuts. Enjoy!
