Tomato Tart
This side dish is one of my favorites! My mom has been making this ever since I was little. It is so easy to make and goes perfectly with a light salad or a vegetable dinner. It saves beautifully and is the reason I love tomatoes as much as I do!
What is so great about this recipe is the crust is premade! My mom says to me, "Why spend hours making pastry dough when the best kind is found in the store?". Trust me- I am all about making everything from scratch. But when it comes to pastry dough, Pillsbury wins out over all.
Some nights I just crave a whole bunch of vegetables. Mainly when I have had my share of meat for the week or when I do not want to deal with all of the prep that goes into cooking meat. This tart is most definitely on mind when I am in these moods. I love to pair this tart with peas, grilled corn and all the other wonderful summer season vegetables. :)
Tomato Tart Recipe
Serves 5-6 people
Prep Time: 15 Min
Cook Time: 30-40 Min
Ingredients:
basic pastry dough (I prefer Pillsbury)
8 oz mozzarella cheese shredded
fresh basil
4-5 ripe tomatoes cut into 1/2" slices (can use baby tomatoes sliced)
1/2 tsp salt
1/4 tsp pepper
1/4 cup extra virgin olive oil
Steps:
Preheat oven to 400 degrees. Line 10" tart pan with pastry dough.
Bake the pastry dough for 6-8 minutes in order to avoid the dough becoming soggy.
Spread bottom of the pastry with cheese and sprinkle with basil. Cover with tomato slices, arranging to cover as evenly as possible.
Sprinkle tomatoes with salt and pepper and drizzle with olive oil. Bake 30-40 minutes.
Garnish with fresh chopped basil. Slice in wedges and serve warm. Enjoy!
