Peach And Berry Cobbler

Peach season calls for homemade cobbler! This recipe is so easy and by far the best cobbler you will ever have. Pair with some vanilla ice-cream for an a la mode treat.

This peach cobbler is one of my mom's specialties. Summer time is my favorite season to eat this fresh dessert as it always tastes better with ripe peaches. You can make this cobbler with any frozen or fresh fruit you like. I tend to mix peaches, berries, and sometimes cherries as well for the cobbler filling. For this cobbler pictured, I mixed fresh peaches with frozen berries found in the freezer section of my grocery store.


In my opinion, dessert is always served better warm with ice-cream. Growing up, we always had vanilla bean ice-cream in the freezer ready to go for whenever my mom decided to bake dessert. The cobbler recipe is so delicious on its own, but the ice-cream definitely takes it to a whole other level of goodness. My favorite vanilla bean ice-cream is Publix brand and Haagen Dazs.


Berry Cobbler Recipe

Prep Time: 10 Min

Cook Time: 25-35 Min

Serves 5-6 people


Ingredients

  • 4 cups fresh or frozen fruit

  • 1 cup flour

  • 1 cup sugar

  • 1 tsp baking powder

  • 1 egg beaten

  • 1/2 teaspoon vanilla

  • 1/4 teaspoon almond flavoring (optional)

  • 1 stick melted salted butter

Steps


1. (If using fresh peaches) Peel the outer skin off of the peaches. Then slice the fruit into smaller 1 inch cubes.

2. Place the fruit into an oven safe glass baking dish. Preheat the oven to 375.

3. Combine the flour, sugar and baking powder together. Beat the egg and add it to the dry mixture. Mix in the vanilla and almond flavoring. Stir until mixture forms a crumbly consistency.

4. Sprinkle the crumble mixture over the fruit until it covers the fruit in an even layer. (you may have extra crumb topping depending on the size of your baking dish)

5. Melt the butter and pour over the crumb mixture. Bake for 25-35 minutes until the crust is golden brown and the cobbler is bubbly. (if the crust is not browning after 30 minutes switch oven to broil for a final 3-5 minutes)
