Chopped Vegetable Salad

This salad is so fresh and is a great side dish for summer lunches!


I love a fresh salad with a light citrus dressing. This recipe is one of my favorites because it includes all of my favorite usual salad toppings! No longer will you be complaining of a lack of toppings or the boredom of eating ~lettuce.


Makes 3 servings - refrigerate for up to 3 days after making


Ingredients

  • 1 cucumber

  • 12 baby tomatoes

  • 1/2 red onion

  • 1 bell pepper

  • 1 avocado

  • 2 tablespoons olive oil

  • 1/4 lemon

  • 1/4 lime

  • 1/8 teaspoon dried dill or 1/4 teaspoon fresh

  • 1/4 teaspoon garlic powder

  • salt & pepper

  • feta crumbles

Steps

1. Cut the cucumber in slices and half the slices, chop the red onion, dice the avocado, cut the baby tomatoes in half and dice the bell pepper.

2. Add all of the vegetables into a bowl excluding the avocado. (you will add this in last)

3. Add the 2 tablespoons olive oil, 1/4 of a lemon~ juiced, 1/4 of a lime~ juiced, garlic powder, and dill to the bowl of vegetables. Toss to coat evenly.

4. Add the avocado and season to taste with salt and pepper. Toss gently to incorporate avocado.

5. Top with feta crumbles and serve
